The Process
- 1 To make Greek village salad, cut the tomatoes in half and then cut each half into 4–6 pieces, using a sharp knife so as not to spoil their appearance. Place them in a salad bowl.
- 2 Cut the cucumbers lengthwise in half, remove the seeds, and slice them into pieces about 0.5 cm thick. Place them in a bowl, season with a little salt, add a few drops of white or red wine vinegar, mix, and add them to the salad bowl.
- 3 Cut the onion in half and then slice each piece as thinly as possible. Place the onion slices in a colander, lightly salt them, and gently squeeze them with your hand. In this way they “wilt,” become more tender, lose their sharpness, and sweeten.
- 4 Thoroughly clean the peppers, removing the stems and seeds. Then slice them thinly and add them to the salad.
- 5 Add half of the olive oil and toss.
- 6 Add the capers, oregano, a little fleur de sel, the cheese, and the olives. Drizzle with the remaining olive oil and serve.
