The Process

  1. 1 1. Prepare the Meat Sauce In a wide pot, heat the olive oil over high heat. Add the ground beef and sauté for 4–5 minutes, stirring constantly to break it up until browned and crumbly. Add the onions, carrot, celery, and a pinch of salt. Sauté for another 5–6 minutes until the vegetables soften slightly.
  2. 2 2. Season and Simmer Add the bay leaves, spices (allspice, nutmeg, cinnamon), salt, and pepper. Stir for 1 minute. Pour in the wine and let the alcohol evaporate for 1–2 minutes. Add the chopped tomatoes and the diluted tomato paste. Once it reaches a boil, lower the heat, cover, and simmer for 25–30 minutes until the sauce thickens and the flavors meld.
  3. 3 3. Cook the Pasta While the sauce simmers, boil the spaghetti in plenty of salted water according to the package instructions. Drain well.
  4. 4 4. The "Kaftisma" (Buttering the Pasta) In the same (now empty) pot used for the pasta, melt the butter over high heat. Add half of the grated cheese and stir for 1–2 minutes. Return the pasta to the pot and toss well until evenly coated with the butter and cheese.
  5. 5 5. Serving Transfer the pasta to a large platter. Pour the aromatic meat sauce over the top and garnish with the remaining grated cheese and fresh parsley.
