The Process

  1. 1 Peel the cucumber and cut it in half crosswise, then cut each piece in half lengthwise. Using a spoon, remove the seeds and cut the cucumber into small cubes (or grate it on the coarse side of a grater, but the result will not be as nice). Take small amounts of cucumber in your hand and squeeze to remove most of the excess liquid.
  2. 2 Place it in a bowl, add the garlic, yogurt, herb, olive oil, vinegar, and salt and pepper, and mix well.
  3. 3 Cover with plastic wrap and store in the refrigerator (it keeps for up to 2 days). However, if we intend to leave it for more than 3 hours, we keep the herb and garlic aside and add them shortly before serving.
