The Process

  1. 1 1. The Initial Boil In a deep pot, combine the grape berries, water, and sugar. Place over high heat. As the mixture warms up, use a slotted spoon to skim off as much foam as possible until it reaches a boil.
  2. 2 2. The Slow Method (Recommended) There are two ways to finish the sweet: Quick Method: Lower the heat and simmer for 40–45 minutes until the syrup thickens. Traditional Method: Once the liquid reaches its first boil, remove the pot from the heat, cover with a lid, and let it rest for 24 hours. The next day, bring it back to a simmer for about 40 minutes or until the syrup reaches the desired consistency. Crucial Rule: Stir as little as possible and only with a wooden spoon to avoid breaking the delicate grape berries.
  3. 3 3. The Finish Add the lemon juice and the rose geranium leaf. Stir very gently and remove the pot from the heat. The lemon juice prevents the sugar from crystallizing, while the geranium adds its signature floral aroma.
  4. 4 4. Sterilization and Storage Distribute the hot preserve into sterilized jars, filling them to the brim. Seal the lids tightly and turn the jars upside down. Leave them in this position until they have cooled completely. This creates a natural vacuum seal. Store in a dark, cool place for several months.
